TASTING NOTES

A new vintage of our Founder’s blend 2018. This wine we only do every second
year and also only in outstanding vintages. It is a wine we first started making in the
year 2000 and the blend so far has never been the same. It is the best 12 – 18
barrels of the year with absolutely no compromise on quality at all. We know which
parts of which blocks gives us the best quality. These grapes are usually fermented
in small open top fermentation tanks after a slow but important hand sorting of
berries after destemming but before crushing. After pressing, the wine is aged in
100% new tight grain French oak barrels for at least 16 months. A selection of the
best barrels will end up in this wine. The 2018 is 2/3rd Cab and 1/3rd Merlot. We
use some older oak barrels in the final blend as well if we think the new wood is too
prominent.
Like you all know we farm organically since 2000. The use of irrigation is also
limited only too young vineyards. The vineyards producing the grapes for this wine
is the oldest and also with the lowest yields on the farm. With yields around 25hl per
hectare we managed to get extremely small concentrated berries with a great deal of
tannin, flavour and colour. This is very important for the ageing of a premium
Simonsberg – Stellenbosch wine. The wine is roughly filtered at bottling and we do
not use any finning agents.
Very deep, dark concentrated colour. Aromas of toast, mocha, cassis and tomato
puree on a very expressive nose. The palate is full bodied with lovely ripe tannins
and an amazing long finish. Oodles of fruit and expensive oak are well supported by
lovely chewy tannin. A real expression of our “terroir” with typical Simonsberg
DNA in abundance. This is one for the long run. Enjoy!

Dark red colour. An array of flavour with ‘cassis” , wild spice, leather and some tomato cocktail evident. The wood is still very prominent and the wine has lots of potential for further ageing. On the palate some good ripe tannins and beautiful classic savoury elegance. Length in abundance and a fantastic mid palate structure. Drink 2 -8 years after vintage.
