Winemaker Notes
It is a blend champagne made from 30% Chardonnay grape and 70% Pinot Noir grape, coming exclusively from Bouzy classified Grand Cru.
It is a champagne produced exclusively during great exceptional years and it is therefore a mono-cru and mono-year vintage.
The color is pale golden yellow with shiny gold reflections.
On the nose: notes of chalk, hazelnut, acacia honey, pruned almond, white vine peach and lychee. In the second attack: notes of citrus fruits such as pineapple or lemon from Menton, plum from Alsace with a touch of candied lemon zest.
The palate reveals hints of Menton lemons and Florida grapefruit with a hint of bergamot from southern Italy. Superb finish, mineral accompanied by a fine touch of salinity.
Food / wine pairing: to taste around 10 ° C on canapés of goose or duck foie gras from the Gers, with sushi or smoked salmon makis, on rolls of Pata Négra from Spain and Charentais melon. Extra with fish in sauce, or even grilled a la plancha.
Store in the cellar at around 16 to 18 ° C, away from light and vibrations, bottle lying down. Do not forget a few tastings during this aging to measure the qualitative evolution of this exceptional champagne.
